Crispy, loaded, satisfying—and totally plant-based.
Now, of course you can use homemade tortilla chips instead of the sweet potato, but the potatoes make these SUPER filling and lower in calories. That’s a win win in my book!
Here’s how to make them:
1 sweet potato, sliced
Place on a cookie sheet (use parchment paper if not non-stick)
Bake at 350°F for 20 minutes
Let cool and toss in a little salt, garlic & onion powder (smoked paprika optional)
Top with:
– Black beans
– Fresh tomatoes
– Jalapeños
– Oil-free queso
– Oil-free sour cream
– Avocado
