Cornbread Butter Swim Biscuits
These Cornbread Butter Swim Biscuits combine the rich flavor of cornbread with the buttery texture of classic butter swim biscuits. Easy, fluffy, and perfect for any meal.
- 1 stick butter or 1/2 cup or 8 tablespoons
- 1 1/2 cups all-purpose flour
- 1/2 cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons white granulated sugar
- 1 1/2 cups buttermilk

Place the stick of butter in an 8 x 8 or 9 x 9 baking dish and melt in the oven or microwave.

In a mixing bowl whisk together the flour, cornmeal, baking powder, baking soda, salt and sugar. Add the buttermilk and mix with a spoon until all ingredients are wet.

Pour batter into baking dish with melted butter and spread evenly in pan with a spoon.

Score batter with knife to make 9 biscuits.

Place in preheated 425 degree oven for 25 to 30 minutes or until centers are done and top is browned. Makes 9 biscuits.
