Method

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. Crush the chips into small/fine pieces and place them into a shallow bowl.
  3. In another shallow bowl, whisk together the eggs and buffalo sauce.
  4. In a third shallow bowl, add the flour.
  5. Cut the onion into ½ inch rings.
  6. Coat each ring in the flour, then egg wash and then finally coat in crushed chips.
  7. Bake the rings for 7-10 minutes and golden brown.
  8. Serve with ranch dressing if desired.
