Ingredients
CHEESE CRACKERS PIG IN A BLANKET
- 2 Bags Quest Cheese Crackers
- 1 cup almond flour
- ¼ cup cotija cheese
- ½ tbsp baking powder
- ⅛ tsp salt
- 1 ½ cup shredded mozzarella cheese
- 1 tbsp cream cheese
- 1 egg
- 16 cocktail sausages
Method
- Preheat the oven 350 F and prepare a baking sheet with parchment paper.
- Place the crackers into a food processor and blend until fine crumbles form.
- Transfer to a large mixing bowl with the almond flour, cotija cheese, baking powder and salt and whisk to combine.
- In another bowl, melt the mozzarella and cream cheese together in the microwave for 30-40 seconds and stir until smooth.
- Stir in the egg.
- Add the wet ingredients to the dry and use a rubber spatula to mix until a dough comes together.
- Separate the dough into 16 evenly sized pieces.
- Roll each piece into a ball and then flatten.
- Wrap each piece around a cocktail sausage.
- Bake for 12-14 minutes and golden.
- Serve with your favorite dipping sauce.
